Chickpea & avocado breakfast toast

Ingredients

2/3 cups chickpeas , rinsed and drained

1 1/2 tsp fresh lemon juice

1 pinch kosher salt

1 pinch black pepper

2 slices whole wheat bread, toasted reduced-calorie

4 tomato slices

1/2 avocado, thinly sliced

1/4 tsp everything bagel seasoning blend

1 pinch crushed red pepper flakes

Directions

In a small bowl, mash the chickpeas to your desired consistency; stir in the lemon juice, salt, and black pepper. Spread the chickpea mixture evenly over the toast. Divide the tomato and avocado evenly over the toast; sprinkle with the everything bagel seasoning and the pepper flakes.
